「欲しかったモデルは在庫切れだったのよ」
"stock"は、日本語でも「ストック」というように、「蓄え、在庫」という意味の単語。それに「〜がない」という意味の"out of"がついて、「在庫切れ」となります。
ex: This item is currently out of stock and we have no definite dates of when it will be back in stock.
（この商品はただいま在庫切れでして、次の入荷がいつになるか具体的な日時は分かりません）

come to think of it, that model is in pretty high demand at the moment.

「でも考えてみれば、新しいモデルはいますごい人気だよね」
"come to think of it"、あるいは"come to think about it"は、「それについて考えてみると」から転じて、「そういえば、その点になると、考えてみれば」という意味になります。とてもよく使われて、便利な表現です。
また、"demand"は「需要」という意味の名詞で、"in demand"となると「需要のある、人気がある」となります。
ex: Come to think of it, my neighbor's cats are resident in my garden all summer.
（そういえば、近所のネコちゃんたちは、夏ずっとウチの庭に住みついているよ）
The skills that are most in demand right now are computer skills.
（いま人気のある能力は、コンピューターを使いこなせる能力だ）

I really had my heart set on that one.

「でも、ホントにあの携帯にしようって決めてたのよ」
"have one's heart set on 〜"で「〜に心を決める、〜を欲しがる」。この場合の"set"は"My heart is set on that one"とできるように、過去分詞系として使われています。
ex: A child will have his heart set on a toy he's seen in a catalog. He begs, he whines, he moans to get his wish.
（子供は、カタログでみたオモチャをどうしても欲しがります。望みを叶えるために、おねだりしたり、すすり泣いたり、うなり声をあげたりします）

I'd say to hell with waiting

「待たなきゃなんないなんてゴメンだ」
"To hell with 〜"は「〜のことは気にしない、〜なんて知ったこっちゃない」ということ。インフォーマルな表現です。
