Gloria is talking to her friend Tony, a travel agent, about her holiday plans.
Gloria: I have two weeks holiday coming up next month, Tony, but I can’t decide what to do with them. Do you have any suggestions?
Tony: Well, you do like the beach? Hawaii isn’t too crowded this month and the weather should be pretty good.
Gloria: I love the beach, but I don’t think my budget will stretch that far. Do you have anything closer to home?
Tony: Well, how about a ski trip? The skiing in Colorado is great right now, and I can get you a discounted room in a nice chalet.
Gloria: I don’t mind skiing, but I think I’d rather go somewhere warm this time.
Tony: Well, how about Florida? It’s warm, there are great beaches and it’s pretty cheap too.
Gloria: That sounds good to me!

I have two weeks holiday coming up next month
「来週2週間の休みがある」
"something is coming up"の形で、「近々〜がある」という意味。ここではその変形パターン（"have ... coming up"）。形容詞では"upcoming"という形になり、"I can't decide what to do with upcoming holiday"のように使います。
ex: I have this big exam coming up at university.
（大学で重要なテストがもすうすぐある）
I don't think my budget will stretch that far.
「予算がちょっと厳しいわ」
"stretch"はストレッチという言葉からイメージできるように、「限界まで引き伸ばす」という意味があります。ここでは"my budget"（予算）が"that for"（そこまで）伸びない、つまり、「そこまで予算を引き上げることはできない」という意味。
I think I'd rather go somewhere warm this time.
「今回は暖かいところに行きたいの」
文末に、"than go somewhere cold"が省略されていて、"would rather 〜 than …"（…するくらいなら〜するほうがましだ）という構文になっています。
ex: I'd rather be hated for who I am than loved for what I'm not.
（自分を殺して愛されるよりは、自分らしくして嫌われる方がましだ）

「それは良いわね！」
相手が言ったことや、相手の提案に対する自分の印象や意見を伝えるとき、"it sounds ..."という形で表現することができます。また人を主語（someone sounds ...）にすることもでき、「誰々が言っていることに対して、私は〜のような印象を持った」というニュアンスになります。
ex: How does a burger sound to you?
