R: Kylie! What are you doing here? I didn’t know you worked out.

K: It’s my second day, actually. What with summer coming, I decided
it was about time to lose that extra weight I’ve put on over the
last couple of months.

R: Good on you!

K: So, how often do you work out, Ryan? You’re in great shape.

R: I come here almost every evening. I weight train three times a
week, and every second day, I do aerobics or play squash. I
guess you could say I’m a bit of a fitness freak.

K: I love to play squash too. Once my fitness level improves, I’m
hoping to get back into it.

R: Well, do you want to play sometime?

K: Sure…as long as you promise not to play too hard. I’m not that
good.

R: No problem! I promise I’ll be nice.

「体を鍛えてたなんて、知らなかった。」
"work out" は、ここでは、「体を鍛える」という意味になる。また、「〜がうまくいく、〜という結果になる」という意味でもよく使われる。また、料金の合計や面積などを表す時にも使います。
Ex. I work out for two hours, three times a week.
(私は、週3回、2時間運動しています。)

What with summer coming, I decided it was about time to lose that extra weight I've put on over the last couple of months.

「もうすぐ夏が来るからさ、ここ2、3ヶ月で増えた体重をそろそろ減らそうと思って。」
"what with 〜" で、「〜などの理由で」という意味。
Ex. What with all this extra work they're giving us, there's no way we'll be able to take a summer vacation this year.
(こんなに残業とかをやらされてるから、今年夏休みを取るなんて無理だね。)

「えらいじゃない!」
その場の状況によって表現が異なるが、ここでは、「えらい、すごい!」の意味になる。その他、「よくやった、いいですね、おめでとう、よかったね!」などがある。
Ex. "I passed the exam!" "Good on you!"
(「試験を合格したよ!」「よくやったね!」)

「すごい締まってるよ。」
"in shape" で、「シェイプアップする、好調、体調がよい」などの意味になる」。また、「〜を(本来の状態に戻すように)しっかりやっておく、(図形や形などの)形態」を表現するときも使う。 
Ex. I have to get in shape for summer.
(私は、夏に向かってシェイプアップしなければならない。)

「1日おきにエアロビクスかスカッシュをしてるんだ。」"every second day"は、直訳すると「毎2日目に」となり、「1日おきに、隔日に」という表現になる。“every other day"という言い方もある。
Ex. I visit my grandmother in hospital every second day.
1日おきに入院中のおばあちゃんにお見舞いする。
