C: Welcome to Vintages. How may I be of service?

B: I’m having a dinner party for about 100 guests next Thursday, and
I wanted to purchase a few cases of wine. I was wondering if you
could help me. I’m afraid I don’t know very much about wine.

C: Certainly. I would recommend a middle of the road wine for both the
red and the white. For a party of that size, you want to have
something that cuts down the middle so as to cover everyone’s
tastes.

B: Okay. Do you have any recommendations?

C: Well, for the red, I have this 2001 Merlot, which is medium bodied
with a dry yet fruity after taste; or I have this 2003 Shiraz which
is slightly more full bodied, but has a very smooth finish. Both
sell for $160 a case.

B: The Shiraz looks quite nice. I’ll go with that. What about white
wine?

C: For white, I recommend either this 2003 Chardonnay, which is very
dry and has a fine, smoky flavor to it; or this 2003 Chablis, which
is also dry, but has a cleaner, crisper taste. The Chardonnay goes
for $130 a case and the Chablis for $120.

B: I like the sound of the Chardonnay.

C: So a case of the Chardonnay and a case of the Shiraz?

B: Better make it two of each. I don’t want to run out.

C: Very good, madam.

I'm afraid I don't know very much about wine.

（ワインのことをあまり良く知らないので）
“I'm afraid" は、「残念ですが、申し訳ありませんが、すみませんが、恐縮ですが」という意味。丁寧で、謝る気持ちを伝えるためのフレーズである。
Ex. I'm afraid we've run out.
（申し訳ありませんが、品切れです。）

you want to have something that cuts down the middle so as to cover everyone's tastes

（皆さんの口に合うように、万人ウケするものを選んだ方がよいと思います)
“cuts down the middle" は、直訳すると「半分に切る」となるが、「より多くの人に受けること」という意味。"appeals to all," “satisfies everyone," “be a hit with everyone" ともいう。
Ex. Her style of music cuts down the middle.
（彼女の音楽は、万人にウケするものです。）

I'll go with that.

（それにします。）
“go with" は、色々な意味があるが、この場合は「〜を選ぶ、〜の線で行く」という意味。その他にも “go with (someone) " 「（誰か）と一緒に行く、（誰か）と付き合う」という意味もあり、 “go with (something)"
「（何か）に似合う、（何か）によくあう」の意味もある。
Ex. I'll go with the steak sandwich and baked potato.
（私は、ステーキサンドとベークドポテトにするわ。）

I like the sound of the Chardonnay.

（シャルドネが良さそうね。）
“to like the sound of 〜" は、「〜が良さそうに思う」という意味。
“〜 sounds good" と同じように使われている。反対の意味で、 “hate the sound of 〜," “don't like the sound of," という言い方もよく使われている。
Ex. I like the sound of this cruise!

C:そうですね、赤なら、このミディアムボディで辛口でありながらフルーティ
ーな後味の2001年のメルロー、あるいは、もう少しコクがあるけど、
後味が滑らかなこの2003年のシラーズがあります。どちらも1ケース
160ドルです。

B: シラーズが良さそうね。それにします。白ワインは?

C: 白なら、私はこの辛口かつスモーキーで美味な2003年のシャルドネ、
あるいは、同じく辛口だけど、透明感のあるさわやかな味の2003年の
シャブリをお勧めします。シャルドネは1ケース130ドルで、シャブリ
は1ケース120ドルです。

B: シャルドネが良さそうね。

C: ということは、シャルドネ1ケースに、シラーズ1ケースでよろしいです
ね。

B:2ケースずつにした方がいいかしら。足りなくなったら、大変だしね。

C:かしこまりました。
