S: So Phil, how much longer to go now?

P: Just one more week! It’s quite weird thinking about it. After 40
years of hard slog, suddenly I’m gonna be a free man!

S: You make it sound like you’ve been in a prison all this time!

P: I’d say that’s a pretty accurate description. Finally, I can kick
back and take things easy.

S: You mentioned a while back about doing a bit of travelling, made
any definite plans yet?

P: No, not yet. There’re a few things I need to sort out first,
like my will. I’ve put that off for long enough. We may take a
short trip next year though.

S: But that’s not for very long. What are you planning to do with
all your free time?

P: Well, there’s plenty to do out back in the garden, and a lot of
odd jobs that need doing, stuff that I let slide like re-painting
the house. I fancy myself as a bit of a handyman.

S: Well, anytime you’re feeling handy, I’ve got a few jobs over here
as well. It’s worth a cup of tea and some chocolate biscuits.

P: Sure thing! Before you know it, I’ll be starting my own handyman
business.

S: And I thought you were retiring!

"take things easy"は「のんびりする、休む、のん気に構える、
物事を楽観する、無理しない」などの意味がある。"take it easy"と
  似たような意味。"kick back"も「リラックスする、休憩する」などの
  意味がある。
Ex: Don't be so impatient. Let's take things easy.
(そんなに、イライラしないで。のんびりいこうよ。)

(それを随分長い間、後回しにしていたんだ。)
"put off"は「後回しにする、先送りする、遅らせる、延期する」
という意味。その他"put"を使ったイディオムには、"put about"
「(うわさなどを)広める、方向を変える」、"put up with"
「我慢する」、"put away"「片付ける、脇へのける、貯金する、
取っておく、(飲食物を)平らげる」、"put together"「集める、
(考えなどを)まとめる、組み立てる、あわせる」などがある。
Ex: We shouldn't put this problem off.
(この問題を先送りにすべきではない。)

I fancy myself as a bit of a handyman.

(僕ならまあまあいい便利屋になれると思うよ。)
"fancy oneself as 〜"は「〜のつもりでいる、〜であると自任する」
という意味。また「うぬぼれる」という意味もある。動詞"fancy"は
「想像する、〜したい気がする、〜に魅力を感じる、気に入る、
(命令形で)〜を想像してごらん」という意味がある。
Ex: Matt fancies himself as an actor.
(マットは、自分は俳優だとうぬぼれている。)

Before you know it, I'll be starting my own handyman business.

(いつの間にか、自分の便利屋ビジネスを始めるかもしれないな。)
"before you know it"は直訳すると「あなたが知る前に」となるが、
「いつの間にか、あっという間に、驚くべき速さで」という意味。
他には、"in the space of no time", "without realizing",
などの言い方もある。
Ex: Before I knew it, I was thirty!
(いつの間にか、30歳になった!)

まあまあいい便利屋になれると思うよ。

S: それなら、いつでもあなたが役に立ちたいと思うときは、ここにも
仕事がいくつかあるわよ!お茶とチョコレートビスケットをご馳走
するわ。

P: いいとも! いつの間にか、自分の便利屋ビジネスを始めるかも
しれないな。

S: てっきり、あなたは定年退職したと思ったのに!
