"once"はこの場合「いったん〜すると、一度〜すると、〜するや
いなや」という意味。その他、「一度、一回、かつて、昔、ある時に、
一度でも、かりにも」などの意味がある。"once"を使ったイディオム
には、"once for all"「この一回限りで、これっきり、きっぱりと
（止める）」、"once in a while"「ときどき、かつては、昔は」、
“once upon a time"「昔々、ある時（おとぎ話の初めの決まり文句）」、
“all at once"「突然、だしぬけに、いっせいに」などがある。
Ex: Once you get into the habit, it's hard to quit smoking.
（一度習慣になってしまったら、たばこを止めるのは難しい。）

That mousy little guy in the corner who wouldn't say boo to a goose?

（あの気が弱い、隅に座っている内気で貧弱な人？）
"not say boo to a goose"は「臆病である、小心である、
びくびくしている」という意味。“boo"は「バー（人・子供を
驚かす声）、ブー（観衆が発する非難・不満の声）」という意味。
Ex: He wouldn't say boo to a goose.
（彼は、小心者だ。）

（本当のジキルとハイドの豹変だったよ。）
"Jekyll and Hyde"は「ジキルとハイド、二重人格者」という意味。
R.L.Stevensonの小説Dr. Jekyll and Mr. Hyde「ジキル博士と
ハイド氏」の主人公、ジキル博士が、薬を飲むと極悪人のハイド氏に
変わることに由来する表現。
Ex: She may look nice, but in reality she has a Jekyll and Hyde
personality.
