「特に何かしたいことある?」
"in particular"で「特に、とりわけ」という意味。 類語の"special"は同類の他のものと比べて「特別違ったもの」をさし、"particular"は「特定の物や人」のことをさす。
ex) What are you looking for?
（何かお探しですか？）
No, nothing in particular.
（いいえ、特にそういうことではありません）

I wouldn't mind seeing it again.

「もう一度みてもいいよ。」
否定または疑問文の中の"mind＋doing"は「(〜すること）を迷惑がる、いやがる」という意味になる。
ex) I don't mind explaining again.
（もう一度説明してもいいですよ）
Do you mind shutting the window?
（窓を閉めてもかまいませんか？）

How about taking a walk through the woods?

「森の中を歩くのなんてどう?」
"How about〜？"で「〜はいかがですか、〜についてはどうお考えですか」の意味。
ex) How about going for a swim?
（泳ぎに行きませんか？）
How about a piece of cheese cake?
（チーズケーキはいかがですか？）

I haven't been to the woods for ages.

「森にいったことなんか長い間ないなー。」
"for ages"は口語で「長い間」という意味です。
ex) I haven't seen you for ages.＝It's been ages since I saw you last.
